You can save your session when you "log out" of GNOME. Close all of your
applications, select "log out" from the Gnome menu, and select "Save
current setup" in the logout box before you say OK. The next time start
gnome, only the applications that were running in the previous session
will start up automatically.
You can also use Gnome menu -> Settings -> Session -> Save Current
Session to save your session without having to logout. There is also a
program to edit your session properties, Gnome menu -> Settings -> Session
