How about compiling your new kernel under /usr/src/mylinux, move
redhats stuff to /usr/src/redhatlinux, and make /usr/src/linux a
symlink to whatever you need at the moment. Before upgrading to
a new RedHat version, you might want to move their original kernel
back to "linux", replacing the symlink.
